Fried Red Tomatoes

That’s right, I said fried.  Since we are entering the peak of tomato season, I thought I’d post a new recipe I tried recently with great success:

  • 2-3 red beefsteak tomatoes
  • 4 eggs beat
  • 1-1 1/2 cups coconut flour, seasoned with kosher salt and black pepper
  • 1 avocado
  • 4 slices cooked bacon
  • Sliced red onion rings
  • Butter

Heat butter in saute pan over medium heat. Slice tomatoes in about 1/2 inch thick slices.  Dip each slice in egg and then move to the coconut flour mixture, coating both sides.  Place slices in hot pan with melted butter.  Brown each side and remove from heat.  Top with red onion rings, bacon and sliced avocado.

I really enjoyed this meal as something that was not only easy, but flavorful and filling.  A great take on friend green tomatoes, with a few extra added summer ingredients!

I’m finally blogging!

Finally.  I couldn’t be more excited about it, because I’ve been talking about it for what seems like years.  It is something I’ve wanted to do for a long time now, and 2012 is the  “do the things I always say I’m going to, but never find the time to do,” year.  So, here I am.  I have never blogged before, well I’ve guest blogged, but that’s it.  I have no idea what I’m doing and I’m excited for another learning opportunity.  I’ve researched and been brainstorming for a while on potential posts, things I want to talk about (for those that know me well, you know I have a lot to say), and well, my life.

At first I wanted to blog about restarting my life over after my diagnosis of type 1 diabetes, but the more I thought about it, the less I wanted to blog about it because it is one piece of my life, and the other things I am passionate about, involved in, and enjoy, are equally as worthy of discussion, I think.

I solicited names for my blog for a while, asked around (to the creative folks I know), compiled all of the ideas and decided on LivingLikeLinds (you may also see TripleL).  Thanks to my little sister Shelb for this idea, as it encompasses exactly what I’m going for, my life.  The runner up was “Frankly Speaking,” provided by my good friend Michelle, for my lack of ability to sugar coat anything (ironic I have type 1 diabetes, and can’t sugar coat a damn thing?).  Thank you to everyone that provided their awesome ideas, it was tough to choose.

Simply put, this is going to be a blog about my life and Living Like Linds.  This includes things I enjoy doing, travels, food and recipes, hobbies, new experiences, diabetes, work, military life, family, my furbabies, organic gardening, JDRF, etc.

I hope to see you here again, and while I can’t promise a post a day, I can promise a lot of fun and sharing to come!
