Harissa Garlic Cauli Fried Rice

I only recently learned about harissa, and I’m thinking its better late than never because it is jam packed full of flavor from fresh ingredients. It can be made many different ways, spicy, as a paste, sauce, etc. but the kind I use is a mild Moroccan red pepper sauce, the brand is Mina. I actually found it at Target and was curious so I bought some – amazing!

I had a bag of riced cauliflower that needed to be used so I decided to make a new cauli fried rice recipe with what I had on hand, the result is a new recipe I’ll be making again and again. Warm, comforting, and important for me super low-glycemic! Little impact on blood sugar is a major win.

Harissa Garlic Cauli Fried Rice

  • 1 bag of riced cauliflower
  • 1 large red onion, diced
  • 3 TBSP minced garlic
  • Avocado oil
  • Sea salt
  • Fresh ground black pepper
  • Crushed red pepper
  • Coconut aminos
  • 1/2 cup black olives, halved
  • 1/4 cup harissa sauce

I started with a drizzle of avocado oil in a large saute pan, adding the diced red onion, minced garlic, sea salt, black pepper and crushed red pepper. I let the onion and garlic cook down until the onions were transparent, then added a dash of coconut aminos (gluten free soy sauce alternative) and the bag of riced cauliflower. I continued stirring to incorporate the moisture into the cauliflower so it’d start to “fry” a little bit – feel free to add additional avocado oil for the frying aspect being careful not to add too much or you’ll have an oily mess. I let all of the ingredients cook for about 20 minutes stirring constantly and then added the black olives and harissa sauce. I cooked about five minutes more just to distribute heat to the olives but preventing mushiness.

I ate two bowls with coconut aminos sprinkled on them – very flavorful and filling. Harissa, my NEW FAVORITE!

Spicy Coconut Chicken Saute

Here’s another recipe that I threw together based off of the vegetables that needed to be used, and the stockpile of quality coconut milk I have on hand – that stuff is quickly becoming a staple to have on hand, as is cilantro.

Spicy Coconut Chicken Saute

  • 1 can coconut milk (I use Natural Value)
  • 2 TBSP coconut oil (wanted a fat source)
  • Broccoli
  • Bok choy
  • Roasted shredded chicken
  • Cilantro
  • Black peppper
  • Crushed red pepper
  • Sriracha

Pour 1 can of coconut milk into saute pan and add the 2 TBSPs coconut oil. Sprinkle generously with crushed red pepper and fresh ground black pepper. Add broccoli and bok choy and saute until cooked, but not mushy, sprinkling with more crushed red pepper (I was feeling the spice). I used leftover roasted chicken that I shredded, but you could add any protein source. I added the meat last as it just needed to be heated.

I filled up a bowl, and topped with a generous handful of cilantro, and then drizzled with sriracha.

Spicy Asian Inspired Stirfry

I was in the mood for spice the other night, with a lot of vegetables in the fridge, so I threw this together and it was fabulous!

Spicy Asian Inspired Stirfry

  • 1 package mushrooms
  • 1 green bell pepper
  • 1 red onion
  • 3 carrots
  • 10 garlic cloves, chopped
  • 1 bag broccoli slaw
  • Crushed red pepper
  • Powdered ginger
  • Black pepper
  • Cashews for topping
  • Coconut aminos

I chopped everything so it was ready to go, then melted about 1 TBSP of coconut oil in a sauté pan. I added the more firm vegetables first, garlic, carrots, onion. Then I added the pepper, and broccoli slaw. I generously sprinkled with crushed red pepper, powdered ginger and black pepper. I continued sautéing until the broccoli slaw started to cook down, about 10 minutes, and then added the mushrooms (and a dollop more of coconut oil), until cooked. All vegetables were crisp, and spicy! Last, I topped with cashews, and tossed until they warmed. Sprinkled with coconut aminos as a soy sauce replacement, and voilà! Spicy Asian Inspired Stirfry 🙂
