Shallot Shrimp Ragu

Random concoction…ready go!

Shallot Shrimp Ragu, on top of roasted eggplant, topped with poached eggs.

Ragu:

  • 2 shallots, loosely chopped
  • 6 cloves garlic, loosely chopped
  • 3 cups wild caught baby shrimp
  • 8 oz tomato paste
  • 2 cups water
  • 1 TBSP bacon fat
  • Himalayan pink sea salt/pepper
  • Garlic powder

Saute all ingredients except for the baby shrimp over medium heat until it has a saucy consistency. Reduce heat to low, and roast eggplant, like this: 1…2…ready, eggplant! Once eggplant is finished roasting, add the shrimp to the simmering ragu, and continue simmering while you poach eggs (looks like hamburger helper, SO NOT hamburger helper!).IMG_3509

Perfect, quick poached eggs:

  • 2 eggs
  • 10 oz water
  • 2 coffee mugs

Fill both coffee mugs about 3/4 full with water. Crack and drop each egg into it’s own mug. Pop in the microwave for about 1-2 minutes. How long you microwave them, depends on how you want the yolks. Mine were over-medium and I went for 2 minutes. Plate eggplant, top with ragu, top with poached eggs. Enjoy!IMG_3527

Sister Love <3

My sister and I used to have a challenging relationship (10 years between us, probably added a layer to that), however, in the last 1 1/2 years or so, we have become very close. Not only as the big sister do I feel immensely proud of her, but she is one of my best friends, and truly is there no matter what.

Look what I got in the mail yesterday (yup, she still calls me “Neen,” from when she was 5?). This people THIS, is what’s important. Family, and showing your appreciation. How lucky am I?

5 minute Tuna Salad!

Mayo. One of my all time favorite condiments. I don’t eat condiments anymore. They’re filled, literally filled with soy, corn, canola, refined sugar, etc. One of the things I miss is the creaminess of mayo in things like tuna or egg salad. I’m fine making homemade healthier mayo, however, I can never use it before it goes bad, so I just don’t keep it on hand. I’m also kind of at the point where I can’t stand more than 3 ingredients in something, hahahaha!

The other night I wanted tuna salad – and I happened to have a freakout at Costco a couple weeks ago buying Wild Planet sustainable tuna ($8 for a 6 pack, which means I have 18 cans of tuna in the pantry) SCORE.

I tossed a can of tuna in a bowl, diced an avocado, sprinkled with Himalayan pink sea salt, fresh ground black pepper, and a tiny bit of onion powder. Then, I sprinkled coconut aminos on it. AAAAAAAHHHHHHHHHHHHH. So creamy! The salt and tuna really brought out the subtle sweetness of the coconut aminos. I inhaled it. Highly recommend this quick flavor combo!IMG_3500

Review – Cave Cravings Snack Box!

Cave Cravings, a convenient paleo-friendly snack box company reached out to me to see if I’d be willing to review their product, and I jumped at the opportunity! I had no idea what to expect inside my little cave box, but was thrilled when it arrived and was full of yummy-ness.

Inside: two packages of Miniature Coco-Roons from Wonderfully Raw, Lemon Pie and Vanilla Maple, two packages of Sophia’s Survival Food Jerky Chews, Original and Mild, 2 Bearded Brothers energy bars in Radical Raspberry Lemon and 2 Bearded Brothers Chews, 1 in Ginger Peach and 1 in Maca Chcoloate and 2 Original Caveman Cookies.IMG_3435

The box included an information card highlighting the features of each product. My absolute favorite part about this snack box is that not only is it convenient, it included several paleo-friendly/primal-friendly small companies that I’d never heard of, that clearly make food with quality ingredients. I LOVED trying the Bearded Brothers energy bars – and will definitely purchase them in the future, they were like a flavorful, gooey little fig newton bar, score! I’d also never heard of Sophia’s Survival Food Jerky Chews, and they’re exactly what you’d want in grass-fed jerky! I really liked that they’re in bite-size pieces so as not to kill my teeth ripping the jerky apart (although this would be very cave-esque). I have always been a fan of Coco-Roons, but hadn’t had the miniature size, perfect for a quick bite-size snack, and we keep Caveman Cookies in the house regularly!
