Healthier Fresh Margaritas

I reference the healthier fresh margaritas with citrus in the Natural Air Freshener post, so make some margs and then make your house smell good!

I don’t have margaritas often because they’re typically filled with high fructose corn syrup, yucky mixers, etc. With type 1 diabetes, I can go from 80 to a blood sugar of 400 in no time flat, and I don’t like that, nor do I want to do that. Every now and then though, in the heat of the summer, an ice-cold margarita sounds really good (I really like salt, maybe that it’s it?). So I decided to just Google for fresh margaritas and see what I found. I reviewed a few recipes and then made these Skinny Margaritas from Cookie and Kate, but revised it just a bit 🙂

Healthier Fresh Margaritas

  • Coarse ground salt for rim
  • 3 ounces silver tequila
  • Juice of 1 lime
  • Juice of 1 whole orange (if it is more dry, use more oranges)
  • 4 teaspoons organic raw coconut sugar
  • 1 lime wedge or round, for garnish

I put the liquid ingredients and coconut sugar in a shaker over ice, shook, and then poured into the salt rimmed glasses. I didn’t measure the juices, but I opted to use far more fresh squeezed OJ than the original recipe because I love the flavor orange adds to drinks, and well, recipes in general. I am not a big fan of agave which is why I replaced it with coconut sugar.

A great drink, very little blood sugar impact, and not too sweet/syrupy! Oh, low-cal too if you count calories 😉photo (4)

Thursday Thoughts

I’ve been absent the last week or so-I had an injury to my lower right forearm, which also happens to be my dominant arm. Typing, writing, mousing, have been painful at best, with me walking around with my arm raised in the air so blood doesn’t pool. There was a little cause for concern, when my body was encountering difficulty fighting the visible infection. I actually asked for friends and family to send extra love my way because I needed it! It’s times like these that I realize I am surrounded by awesome individuals that care about me and my well-being, and all I need to do in my time of need, is ask.

Why don’t I ever ask? Why don’t I put myself first? Also, how did I get so lucky as to have all of these people in my life?

Then, there are those individuals that reached out that I haven’t heard from in years to find out what was going on, I shared with them, and then I never heard from them again. This naturally has me thinking. Why don’t I hear from you regularly, or at least every now and then? Why do you only reach out in my (rare) time of need and then disappear again once you find out? Do you actually care? So, my thoughts to you this Thursday as I start this August off blogging again now that typing isn’t too painful, are this: is it you, or is it them?

Natural Air Freshener (Margaritas First!)

In the heat of the San Diego summer (is that a thing?) I’ve been making healthier margaritas with fresh citrus. Since I’m not composting (yet) I always have extra rinds from lemons/oranges/limes. This is one of my favorite uses for the rinds, because it doesn’t saturate your home with perfumes, thus less allergen-provoking.

Simply boil water in a medium to small-sized sauce pan, once boiling, add citrus rinds, 1-2 cinnamon sticks, and sprinkle with ground cinnamon. Let boil for 10-15 minutes, and then reduce to simmer. You can leave it on for as long as you’d like, just make sure you continue adding water as it evaporates. Your home will smell amazing 🙂 AND you’ll be having margaritas.photo 1 (3)photo 2 (3)photo 3
