And even if you eat junk food and workout like crazy, you may appear healthy, but your insides aren’t! Think about it long and hard-how do you really feel? Does your body feel good? Are you still having other issues that exercise isn’t “solving,” like GI issues? Think about it!

The Small (or Big) Things

Empty trails, mountains, the sun, peace and quiet, little white snails. Whether big or small, I’m so thankful they’re right outside my front door, waiting for me whenever I need them. It really is the small (or big) things!

Steaming Eggs

Do you have a vegetable steamer? I do! Do I steam veggies, not so much. BUT, it is perfect for eggs. No boiling water in a pan, cracking eggs, leaky whites, etc. Fill the steamer with water, put the eggs in the tray, steam for 20 minutes. Ta-da, hard boiled eggs. So easy and convenient.

Bacon Fat Kale

Yup, that’s what I said, BACON FAT KALE!

I had a bag of Kale that needed to be used, so I decided to toss it in a sauté pan and sauté away…but instead of oil, I decided to sauté it in our reserved uncured bacon fat. I have to tell you, if you have an aversion to kale, or “green things” this is your method to try! Turn the heat on in the pan, give the bacon fat a head start, toss in the kale, sprinkle with kosher salt/pepp, and voilà! Kale that tastes like bacon.

P.S. Something I’m really working on right now is controlling the way that I think, eliminating the negative thoughts in my head, and trying to improve my life, with positive thoughts. Not easy and definitely a journey!
