Cucumber Bacon Salad

Full credit goes to my sister’s co-worker who told her about this little gem and she passed it along to me! Threw it together yesterday and it is super tasty (odd combination I wouldn’t have normally thought to put together), but nonetheless will add this to my rotation! It reminds me of a BLT in salad form. I think it normally calls for spiralized cucumber but I just didn’t have time to do that over lunch yesterday and I’m also not sure if it has an official name. So, thanks to my sister’s co-worker whom I have not met 🙂

Cucumber Bacon Salad

  • Cucumber (sliced, spiralized, etc.)
  • Cherry tomatoes, halved
  • Bacon pieces
  • Mayo (I use Primal Kitchen)
  • Dash of salt/pepper

I didn’t measure any ingredients, I just eyeballed it so feel free to use as much of each ingredient as you prefer for your own taste. Toss them all together and enjoy fresh (this would be a great dish to make for any kind of party, tailgate, etc.)!

 

Avocado Nectarine Salad

All the summer fruits are ripe for the picking! That means summer salads that are refreshing in the heat, especially if you’re in, you know, Phoenix! Wowza.

Avocado Nectarine Salad

  • 1 avocado
  • 1 nectarine
  • Olive oil
  • Sea salt
  • Black pepper

Dice the avocado and nectarine, drizzle with olive oil (I want to emphasize and HIGHLY recommend a really good quality olive oil. Like from Greece, no fake US olive oil. Thanks to hubs for bringing me real olive oil on his way home from deployment – holy shizz), sprinkle with sea salt and enjoy! Refreshing, filling and full of nutrients.

Butter Lettuce Cilantro Spicy Salad

Worst name for a salad, ever, but whatever. Here’s what I had for dinner last night:

  • Butter lettuce
  • 1 1/2 avocados, diced
  • 1/4 cup diced white onion
  • Fistful of cilantro (like, a big chunk)
  • 1 tsp Louisiana hot sauce
  • 1 tsp garlic olive oil
  • Fresh ground salt/pepper

Toss everything in a bowl, and enjoy.

Sun Sugar Tomato Salad

One of the tomato plants I planted this year is a “Sun Sugar Cherry” plant (each year, I kind of just pick 5/6 different kinds and see what I end up with-however, this one will be planted every year). Little orange cherry tomatoes, that are, surprisingly sweet and flavorful. In fact, after I picked them last night I tried one, and then I had quite a few more (fun fact: several years ago, Sun Sugar was named by Sunset Magazine as the best tasting tomato in their trials for its sweetness and rich tomato flavor that includes just the right amount of tartness!). Probably the best cherry tomato I’ve ever had. I decided to throw together a salad with ingredients I had at home, and it turned out to be fabulous!

Sun Sugar Tomato Salad

  • Butter lettuce
  • Diced red onion
  • Chopped crimini mushrooms
  • Grilled garlic
  • Sun Sugar tomatoes
  • Chopped beets
  • Microgreens
  • Salt/Pepper
  • Tessemae’s Cracked Pepper dressing

Toss everything in the bowl, and top with a handful of microgreens, salt/pepper and some Tessemae’s (paleo friendly!) Cracked Pepper dressing.

Eat your colors!

Avocado Kimchi Salad

My new favorite salad, full of flavor and health. One of my favorite things is a cold refreshing salad with light ingredients, and adding something steaming to it.

Avocado Kimchi Salad

  • Butter lettuce
  • 2 sliced avocados
  • 1/2 cup kimchi
  • 3 scrambled eggs (in grassfed butter)

Voila.

Amazeballs!
