Sauce, cheese, and pasta free Lasagna!

I am having trouble keeping up with the tomato eating from the garden and I cannot let them spoil, so I decided to try a lasagna with fresh tomatoes from the garden (replacement for the sauce).

I roasted thin sliced eggplant in the oven first, like I normally do. Just drizzled it with a little garlic macadamia oil, kosher salt and pepper. I layered the roasted eggplant slices, fresh sliced garden tomatoes, fresh large basil leaves, sliced onion rings, and thinly sliced garlic cloves in an 8×8 glass baking dish. I’d sprinkle with kosher salt and pepper, and drizzle with garlic macadamia oil every now and then. If I’d had a larger eggplant, I would have made a 9×13 batch, and definitely will next time.

We couldn’t get over how awesome it was, sans the sause, cheese, and pasta. I was tempted to add a little fresh grated parmesan, but thought I’d give it a chance without first, and it in no way needed it. It really is amazing how wonderful things taste when they aren’t drenched in heavy sauces and other unnecessary ingredients. Being able to taste the real flavor of a food is something I’ve come to truly enjoy.

When I took it out of the oven Seth said “that’s all there is?” We ate the entire dish-ooops!

Saturday’s Veggie Grilling Party

On Saturday’s Seth and I tend to cook even more than we do during the week because we have more time to prep, and aren’t as rushed. The weather has been gorgeous in San Diego, especially in the evenings, so we’ve been grilling a lot. This past Saturday, we had a little veggie grilling party: Seth’s Stuffed Shrooms (http://wp.me/p2zSoO-1S), stuffed peppers and grilled zucchini.

Seth’s Stuffed Shrooms are so good, we wanted to make them again, but we had leftover stuffing, so we decided to clean out some mini-bell peppers, and stuff those as well. The peppers were great grilled and offered a different flavor if you’re not into mushrooms:

We also grilled some zucchini we were given from a friends parents (yay for sharing fresh food!). These zucchini are gorgeous, huge, and so easy to prepare. Simply slice them thin, toss the slices in a large zip-loc bag, sprinkle kosher salt and black pepper, and a drizzle of garlic macadamia oil and then shake in the bag. Zucchini is my favorite grilled, because it has so much water content, it crisps better, in my opinion. I use macadamia oil to cook with as it’s more heat tolerant and the properties don’t change increasing toxins, like heating olive oil. This is a Paleo aspect.

Paleo Bread Follow-up Thoughts

 

Here are my thoughts on the new Coconut Flour Paleo Bread from Julian Bakery:

Fun Saturday Finds in La Jolla!

Without gluten, most breads can be quite dry (thinking of my baking experiences with almond flour here), but this bread is exactly the opposite. It is extremely dense, and quite moist. It has a bit of an egg smell, as it’s made with egg whites, and is almost a little sticky after you first refrigerate it. It has no coconut flavor, at all. You can read about the ingredients and see nutritional facts here: http://www.julianbakery.com/paleo-bread/ This is also an awesome option for those with nut allergies!

We had it Sunday morning toasted with our (organic free range pastured) eggs and (uncured) bacon, it was a really nice addition to our breakfast. We each had just one slice with apple butter, and it was great toasted because it dried it out a bit.

I was making a new recipe the other night with melted extra dark chocolate, and I had a little bit leftover-because chocolate must never be wasted, I decided to take out a slice of Paleo Bread and just roughly tear it into bite size pieces dipping it into the remaining melted chocolate-what a pleasant surprise that was! An added bonus for me living with type 1 diabetes, it has zero effect on my blood sugar = WIN!

Although we no longer eat bread of any kind, this will make it into our Paleo lifestyle rotation. I’m looking forward to trying the Almond Flour Paleo Bread, to compare.
