Mind your Mitochondria!

Have you ever watched any TEDx Talks? If not, you should. Educational talks about varying topics that bring people together to understand. That’s awesome! One of my first TEDx Talks was “Minding your Mitochondria,”  from Dr. Terry Wahls MD, when I was first getting into the paleo lifestyle. I was excited to hear and see the effects that nutrition has had on her progressive MS, but thrilled that she is from my home state of Iowa, a doctor at the University of Iowa, and mother to Zach Wahls.

Today, the Des Moines Register published an article about her journey: Doctor with MS suggests caveman diet.

I’m glad that more articles are popping up like this, because it means people are paying attention, and moving towards taking back their health! Talk is a good thing, and I am most excited that more and more MDs are turning to the source, food, rather than drugs to treat symptoms.

Fried Rice…with no Rice

I don’t eat rice anymore. It’s high glycemic, gmo, nutritionally void food, in my opinion. I don’t really miss it, either (or what it did to my blood sugar).

I completely and accidentally stumbled upon this recipe last week when I had to use or lose my bag of broccoli slaw. When I started cooking, the last thing on my mind was rice. But it looked a lot like rice…so I went with it 🙂

“No Rice Fried Rice”

That’s it! 5 simple ingredients. I started by sautéing the entire bag of organic broccoli slaw from Trader Joe’s (it’s the only place I’ve seen broccoli slaw like this. Shredded carrots and shredded broccoli stalk), in a little Tropical Traditions Coconut Oil. I lightly seasoned with kosher salt/pepp, and continued sautéing until it had really cooked down. I broke 4 eggs into the same pan, and began stirring (thinking this would just be a yummy scramble). Then it started to resemble fried rice, but needed more egg, so I broke two more in the pan. I cooked for maybe 10 minutes longer, stirring constantly making sure the egg was cooked thoroughly and broken up well. Since it looked so much like fried rice, I decided to treat it as such, and sprinkle with coconut aminos (soy-free soy sauce, therefore gluten free!), it was TO-DIE-FOR. What the heck. Re-heated even better the next day! So easy and flavorful.DSC_0342

I’m not sure why I didn’t think of this? Also, like 2 years ago? With the amount of bacon we cook, and the fact that we reserve the bacon fat for other uses, drrrr. She is on the money with this one!!

I love eating giant salads almost daily and I am a firm believer that the dressing I use plays a very important role in how much I enjoy my salad. Almost every dressing on the store shelves contains some sort of processed hydrogenated seed oil: soybean oil, cottonseed oil, canola oil (rapeseed oil), and the list goes on and on…Holy omega-6 Batman! We do not even touch those horrible rancid oils in our house. Olive oil has its place, but I am getting sick of it on my salad. I love bacon, when you cook bacon you end up with bacon flavored oil (melted fat). Hmmmm, that would make a great oil for my salad. *Poof*! Balsamic bacon vinaigrette was born.

Ingredients:

  • 1 package apple smoked bacon
  • 1.5 cups balsamic vinegar

Chocolate Bacon Bark

I was cooking and baking up a storm last week while I was on vacation, because nothing relaxes me more.

I threw this together, and wasn’t sure how it’d turn out as I used ingredients in a new way (allergen free chocolate chips, that actually taste like chocolate!) for the first time. It ended up going over better than the other bark I’d started making at the time, and takes very little time or effort. My favorite kind of recipe!

Chocolate Bacon Bark

  • 1 bag Enjoy Life Chocolate Chips (see http://wp.me/p2zSoO-2R)
  • 1/2 package uncured cooked bacon, cut into pieces
  • Fresh ground sea salt

Melt the bag of Enjoy Life Chocolate Chips in the microwave, in a pyrex dish until smooth. Pour melted chocolate into a greased 8×8 glass backing dish, lined with wax paper. Generously grind sea salt over entire square, sprinkle with bacon pieces. Place in the refrigerator until hard, then break into pieces.

Voila!

Giving Thanks

I think I fail to realize on a regular basis, just how lucky I really am, taking for granted all the richness I have in my life. I have a wonderful husband, supportive and loving family that I wouldn’t trade for the world, among many other things. Life is busy and stressful on a daily basis, and I feel like I get sucked into it, failing to realize the more important things. I really do have so much to be thankful for, every day, not just one day of the year.

Things I’m thankful for:

  • My husband, and the awesome life and marriage that we’ve created together
  • My family, their support and love, and for always being there no matter what
  • My friends, see “family”
  • My furbabies, they’re unconditional love, makes me smile daily
  • My health, a challenge, but one that can be met
  • My job, I love what I do, the company I work for and the product (it’s changed my life)
  • My home, in Iowa, where I was born and raised
  • Medical technology, for helping me live a successful, healthy productive life
  • Medical insurance, I have been very lucky with wonderful health coverage that has made chronic disease, very affordable
  • The way that I was raised, with values, ethics and tough love
  • My childhood, I had such a fun childhood, and my happiness and well-being were always put first

There are so many things I’m thankful for, but these are the ones that are on my mind today.
