Curry Vegetable Stir-Fry

Sunday night, I had zero desire to cook, and was contemplating junk food (I do still do this). I resisted the urge, which was hard as hell (it is still hard sometimes), so I did what I do often, which was “what needs to be used so it doesn’t spoil?” Bell peppers and zucchini, so I decided to do a simple vegetable stir-fry. For flavor, I added shallots and garlic. When it was almost done, having been craving Thai food, I thought I’d add curry powder. It smelled amazing, but then I remembered I had pineapple in the fridge that needed to used, so I tossed that in too! What I ended up with was an awesome Thai inspired, colorful, and warm meal.

Curry Vegetable Stir-Fry

  • Bell peppers (2 colors)
  • Zucchini, 1 green, 1 yellow
  • 2 shallots
  • Garlic cloves (as many as you like!)
  • Pineapple
  • Curry powder
  • Kosher salt/pepp

Pumpkin Spice Latte

Fall is my favorite season, each year I look forward to boots, hoodies, and warm drinks.

One of my favorite warm drinks is the pumpkin spice latte (I love pumpkin anything), however, I get hung up on the ingredients in their latte, not to mention what it does to my blood sugar:

I decided to try making my own at home, and it was fantastic with no blood sugar spike (it also helped me feel a bit more Fall-ish drinking out of my Yosemite mug, since it was about 85 degrees outside-boo!).

Pumpkin Spice Latte

  • Pumpkin coffee of your choice
  • Organic Valley milk (I prefer whole, but they were out last time)
  • Cinnamon
  • Cloves
  • Stevia in the raw

Pretty simple, brew the coffee, add the ingredients to your liking, stir and enjoy! You could easily change the spices, coffee, and cream/milk you use, to tailor it to your taste preferences (heck, drop in a chai tea bag!) 🙂

My version has about 30 calories, Strabucks version has about 380.

Diabetes Art Day 2012

Today, September 24, 2012 is Diabetes Art Day: http://www.diabetesartday.com/.

I absolutely love this idea, and this is my first time participating. I’m just getting into Diabetes Social Media, so it snuck up on me this year, therefore, I wasn’t feeling too inspirational on short notice. Then I woke up yesterday morning, and was greeted with a 445 on my blood glucose meter, and my first thought was the emotion that this invoked, which to me, can be a form of art, if for nobody else but myself.

So, in all its simplicity, here is my contribution this year. I’m looking forward to getting more involved next year!

 

Title: Speaking the Truth

10 is better than 0.

and 20 is better than 10.

If I had a dollar for every time I said to myself, “I can’t get 30 minutes or more of exercise in, so I’ll just wait,” or, “it’s not worth it if I only do 10 minutes.”

This is not true. I know there are studies that show that your body may not benefit unless you have had an increased heart rate for at least 30 minutes, etc…and while that may be true, I know that for me, it is not. I typically get up in the morning around 5-5:15 every day to exercise. Today, I slept a little later (;-)) but rather than re-setting my alarm so I could sleep for another 25 minutes, I got up, changed, and went for a 20 minute run. I know that I benefited physically, it not only felt good, but mentally, it’s like a drug! It clears my head and gets me started for the day.

I stopped making excuses about 11/2 years ago and formed habits, because I really do feel that even though I can’t always exercise for an extended period of time, or as long as I want (think…asshole blood sugars), a 15 minute walk with my dog is better than sitting on the couch. 20 minutes of quality stretching before bed, clears my head. A 17 minute run on a day I slept late, is better than nothing. Get moving people!

A good write-up that’s easy to understand regarding Gluten/Foods/Agriculture. Think about it…yet another reason to just go Paleo! Do it!

By now you’ve probably heard of people going gluten-free.  If you’re like me, this has probably also induced some eye-rolling and wondering what the fuss is all about.  Well, at the suggestion of my doctor (quoted in this article from One Medical, a medical practice that actually functions like it’s the 21st century) I reluctantly decided to give the gluten-free diet a shot as treatment for a bad case of patellar tendinitis (knee pain) that was keeping me from running.  And when I say reluctantly, I mean reluctantly.  I love running, but I went through every other suggestion she had to offer before trying this “new fad”.

I’ve been off gluten for about three months now and the resulting improvements in my health by themselves would have been sufficient to keep me off the stuff (I’m trail running again and, well, I fart less.  Apologies to my college roommate…
