Chicken, with Skin

I honestly can say I will never eat chicken again, without skin. Not sure why it took me so long to join on that bandwagon, but holy mother of amazingness. I’m obsessed.

Buy chicken with skin. Stuff skin with whatever you want. I’ve stuffed with sliced garlic and yellow onion, and sliced garlic and shallots. I think I liked the yellow onion better. Generously sprinkle with salt and pepper, before roasting in the oven at 350 degrees until done.

Butter, chives, herbs, cheese, another kind of meat, vegetables, lemons, limes, oranges, etc. OH EM GEE. Do it this weekend.

Hillcrest Farmers Market

This past Sunday I finally made it to the Hillcrest Farmers Market here in San Diego. I’d been wanting to attend for some time, and finally made a point of going. I had a great time, and loved the offerings for quality food! One of the best things about living in San Diego, is the year-round offerings of amazing food and markets. I’m making more of a point to attend and check them out, there are so many to choose from, and on each day of the week.

Having just received my Paderno Spiralizer and having loads of zucchini in the garden, I was really excited to get this pesto for a “pasta” sauce. The Happy Pantry, I loved! 5-6 kinds of homemade organic sauerkraut (I bought the spicy kimchee flavor after trying most of them), and can’t wait to have it with sausages, eggs, etc. On the bottom, some garlic and herb homemade goat cheese. It is pasteurized, but I’m okay with it now and then. It was so creamy and tasted amazing! This Saturday, I think we’ll try the Little Italy Mercato ๐Ÿ™‚

Then, I ran into a booth that had a great selection of health foods, supplements, etc. and I was drawn in!ย Until…while talking to a couple of women at his booth he said, and I quote “30 days, and you can completely reverse type 1 diabetes.” Oh no. You cannot do that. I eat pretty raw already, and have been Paleo for 2 years, and while these things have drastically helped me manage my type 1 diabetes, at the end of each day, I still have it. Supplements don’t reverse the autoimmune reaction (nor do foods!). I took his card so I could reach out and share information, so that it will perhaps help him understand. This was one of those times where it really bothered me, but I didn’t have it in me to educate at the time.

Paleo Wraps!

Last night I made veggie wraps using fresh veggies from the garden right off the vine and our paleo Wraps! Fortunately Seth and I live in San Diego, where we can venture over to La Jolla and buy paleo products at The Julian Bakery (which we do after a yummy breakfast on the coast) ๐Ÿ™‚ The last time I was in their La Jolla Bakery it had been redone, and was filled with paleo products, books, resources, foods, etc.!

I really liked the wraps. They’re only 70 calories (if you count), high in dietary fiber, and nothing but coconut. They had a very slight coconut flavor, every now and then depending on the bite, but not always. I was most impressed with how sturdy they were. I filled them with a moist summer vegetable mixture that I thought for sure would make them tear easy, or get soggy-not so. They never broke, even by the time I got to the third one. A bonus for me is that they’re non-gmo and vegan (yay for clean food!).

I don’t really miss tortillas, but every now and then I want a burrito, enchilada, or even just a wrap with meat/veggies. I will definitely use these again, and really the opportunities for fillings are endless!ย photo 1 (6)DSC_0033DSC_0037photo 2 (5)

Urban Garden Update!

I haven’t posted about my garden in a while, but we’re still trucking right along and I’m almost to the point of permanently stained neon green fingertips ๐Ÿ™‚ Seth and I just staked again with 8ft stakes and trellises, because the tomatoes are out of control:photo 2 (4)

I haven’t had a lot of difficulty this year with snails and slugs, aphids or tomato worms, which is great! Partially due to the lack of moisture here in San Diego (it’s extremely dry this summer), but also because I began spraying with neem oil and BT at the very first signs. I am still struggling a little to combat blight organically, especially on the Roma. Still, nothing relaxes me like gardening does (guaranteed blood sugar drop):photo 4

I have noticed grasshoppers for the first time-and they’re HUGE (they particularly like the catnip). They don’t seem to be doing much damage…so I guess I’ll just be thankful for that at this point. I’ve also found quite a few ladybugs, which I love, and could also be contributing to the lack of aphids.photo 1 (4)

I’ve been harvesting zucchini and cucumbers for about 6 weeks or so, and still going strong. The tomatoes are really coming into season now and last night I harvested Cherry, Roma, Yellow Pear, and the large San Diego and Beefsteak are just about there. I can’t wait for BLTs on Paleo Bread!ย Food truly is beautiful-notice the rich color as compared with commercially grown produce:photo 3 (1)
