Collard Pastrami Wraps

This meal was inspired by several things: 1) My obsession with reuben sandwiches, 2) this amazing post a friend of mine shared: The Un-deli: 10 Over-the-Top Breadless Sandwiches, 3) The fact that I cannot commit to buying Thousand Island dressing, 4) I don’t really do gluten-free bread, and last 4) The store was out of corned beef (what?), so pastrami.

And now…I’m kind of becoming obsessed with different wrap options…large collard green leaves have got to be the easiest wrap ever, not to mention, nutrient powerhouse. Fill them with whatever you want!

Collard Pastrami Wraps

  • 1 collard green
  • Sir Kensington’s sriracha mayo
  • Pastrami
  • TJs raw sauerkraut
  • Diced red onion
  • 1 thinly sliced kosher dill pickle

Wash collard leaf and pat dry, then layer the remaining ingredients in the order above on the leaf. Wrap and eat.

Smoked Pork and Pickle Salad

I love pickles, could eat them all day. Seth hates them and won’t let me near him for pickle kisses.

It’s still been kind of warm/muggy (for San Diego) lately, which is when I crave salads the most. Last night I just wasn’t feeling my usual all veggie filled salad, so I used random things in my fridge, and I loved my salad!

Smoked Pork and Pickle Salad

  • Butter lettuce
  • Diced red onion
  • Cut up smoked pork (we have a ton from our inaugural smoking)
  • Grilled garlic (also leftover from a big batch I put on the grill)
  • Fresh pickles
  • Tessemae’s Zesty Ranch dressing
  • Sprinkle salt/pepp

Ta-da!

Avocado Salad with Microgreens

I really wanted to call this “faux chicken salad,” but I feel like anything “faux” these days equates to tofu, and that is not what this is. It’s filled with flavor, and had the richness and texture of chicken salad!

Avocado Salad with Microgreens

  • 2 ripe avocados, diced
  • Roughly a 1/4 cup diced white onion
  • 2 TBSP Sir Kensington’s original mayo
  • Small handful of microgreens
  • Himalayan sea salt
  • Cracked black pepper

Mix together, and enjoy a filling, rich, healthy alternative to the traditional soy/chemical filled chicken/tuna/egg salads out there.

Cabbage Bacon Slaw

It’s hot in San Diego…which means…light, cool meals and sides! The next time you attend a BBQ or party and want to take a fabulous side dish that isn’t A) soy and corn syrup filled potato salad, or B) blood sugar spiking inflammatory grains macaroni salad, whip this together!

Cabbage Bacon Slaw

  • Shredded cabbage
  • Walnuts (I used pieces)
  • Diced red onion
  • Fried bacon pieces
  • Himalayan pink salt
  • Cracked black pepper
  • Olive oil
  • Bacon grease
  • Juice of 1/2 a lemon

Toss everything in a bowl, season to your liking with salt and pepper, squeeze the juice of 1/2 the lemon over the mix. Drizzle just a little olive oil, and 2-3 large spoonfuls of fresh bacon grease (from frying your bacon pieces) over top, and toss!

You could definitely add fresh apple, if you choose, the lemon would help the fruit last 🙂

Review – Cave Cravings Snack Box!

Cave Cravings, a convenient paleo-friendly snack box company reached out to me to see if I’d be willing to review their product, and I jumped at the opportunity! I had no idea what to expect inside my little cave box, but was thrilled when it arrived and was full of yummy-ness.

Inside: two packages of Miniature Coco-Roons from Wonderfully Raw, Lemon Pie and Vanilla Maple, two packages of Sophia’s Survival Food Jerky Chews, Original and Mild, 2 Bearded Brothers energy bars in Radical Raspberry Lemon and 2 Bearded Brothers Chews, 1 in Ginger Peach and 1 in Maca Chcoloate and 2 Original Caveman Cookies.IMG_3435

The box included an information card highlighting the features of each product. My absolute favorite part about this snack box is that not only is it convenient, it included several paleo-friendly/primal-friendly small companies that I’d never heard of, that clearly make food with quality ingredients. I LOVED trying the Bearded Brothers energy bars – and will definitely purchase them in the future, they were like a flavorful, gooey little fig newton bar, score! I’d also never heard of Sophia’s Survival Food Jerky Chews, and they’re exactly what you’d want in grass-fed jerky! I really liked that they’re in bite-size pieces so as not to kill my teeth ripping the jerky apart (although this would be very cave-esque). I have always been a fan of Coco-Roons, but hadn’t had the miniature size, perfect for a quick bite-size snack, and we keep Caveman Cookies in the house regularly!
