5 minute Tuna Salad!

Mayo. One of my all time favorite condiments. I don’t eat condiments anymore. They’re filled, literally filled with soy, corn, canola, refined sugar, etc. One of the things I miss is the creaminess of mayo in things like tuna or egg salad. I’m fine making homemade healthier mayo, however, I can never use it before it goes bad, so I just don’t keep it on hand. I’m also kind of at the point where I can’t stand more than 3 ingredients in something, hahahaha!

The other night I wanted tuna salad – and I happened to have a freakout at Costco a couple weeks ago buying Wild Planet sustainable tuna ($8 for a 6 pack, which means I have 18 cans of tuna in the pantry) SCORE.

I tossed a can of tuna in a bowl, diced an avocado, sprinkled with Himalayan pink sea salt, fresh ground black pepper, and a tiny bit of onion powder. Then, I sprinkled coconut aminos on it. AAAAAAAHHHHHHHHHHHHH. So creamy! The salt and tuna really brought out the subtle sweetness of the coconut aminos. I inhaled it. Highly recommend this quick flavor combo!IMG_3500

Review – Cave Cravings Snack Box!

Cave Cravings, a convenient paleo-friendly snack box company reached out to me to see if I’d be willing to review their product, and I jumped at the opportunity! I had no idea what to expect inside my little cave box, but was thrilled when it arrived and was full of yummy-ness.

Inside: two packages of Miniature Coco-Roons from Wonderfully Raw, Lemon Pie and Vanilla Maple, two packages of Sophia’s Survival Food Jerky Chews, Original and Mild, 2 Bearded Brothers energy bars in Radical Raspberry Lemon and 2 Bearded Brothers Chews, 1 in Ginger Peach and 1 in Maca Chcoloate and 2 Original Caveman Cookies.IMG_3435

The box included an information card highlighting the features of each product. My absolute favorite part about this snack box is that not only is it convenient, it included several paleo-friendly/primal-friendly small companies that I’d never heard of, that clearly make food with quality ingredients. I LOVED trying the Bearded Brothers energy bars – and will definitely purchase them in the future, they were like a flavorful, gooey little fig newton bar, score! I’d also never heard of Sophia’s Survival Food Jerky Chews, and they’re exactly what you’d want in grass-fed jerky! I really liked that they’re in bite-size pieces so as not to kill my teeth ripping the jerky apart (although this would be very cave-esque). I have always been a fan of Coco-Roons, but hadn’t had the miniature size, perfect for a quick bite-size snack, and we keep Caveman Cookies in the house regularly!

All quality food products from great small companies working to make a difference, combined into one snack-box for your variety and convenience by Cave Cravings! You can find Cave Cravings on Facebook and at their website to sign up for their box delivery service. In addition, I’ve included photos of all of the products in this box, and their ingredients below for your review.

Bacon Wrapped Dates

Have a party, and make these!

I accidentally bought dates with pits – I can assure you that probably won’t ever happen again 😉 IMG_3466

I pitted each date, wrapped it in a 1/3-1/4 strip of bacon (depending on the size of the date), and skewered. I ended up with 3 full skewers, so I flavored each differently: salt and pepper, garlic chili, and maple. I broiled for about 20 minutes flipping half-way through, then baked at 350 degrees (to make sure the bacon was done all the way through) for about 10 minutes. Just keep an eye on them, you’ll be able to tell when they’re done.IMG_3470

One recommendation for the flavorings, be very generous and use more than you’d think you would want, it really helps the flavor stick. Salt and pepper were just fresh ground right on top. For the garlic and chili I used garlic powder, and ground chili pepper (not spicy at all! Again, use more than you’d think). For the maple, I simply drizzled pure maple syrup over the length of the skewer. When I flipped them, I did the same. I loved them all, but preferred the salt and pepper!IMG_3474

10 Years-Then and Now

What a difference 10 years makes.

Then: acne (all over), round face, out of shape, cellulite, restless sleep, smoker, eating processed junk, high cholesterol/triglycerides/blood pressure, no type 1 diabetes or diagnosed lipedema, much larger calves/legs. Weight, 120 (diagnosed with type 1 diabetes and started an insulin pump, rocketed to 145 over the next 7 years).10 Years Ago

Now: Clear skin, best shape of my life, no cellulite, sleep like a baby, non-smoker, cooking, leaner than I ever have been, type 1 diabetes and lipedema diagnosis, much smaller legs, digestion issues nearly gone, Paleo. Weight, 122.Now Photo Combined

They say that with age comes wisdom, for that I’m thankful. I do wish I’d found a healthier path sooner, but better late than never. I reached a point when I mentally decided to just let go of this need to “control” and learn to love myself, somewhat of a relinquishment, and what do you know. Shit changed in a big way.

Chicken, with Skin

I honestly can say I will never eat chicken again, without skin. Not sure why it took me so long to join on that bandwagon, but holy mother of amazingness. I’m obsessed.

Buy chicken with skin. Stuff skin with whatever you want. I’ve stuffed with sliced garlic and yellow onion, and sliced garlic and shallots. I think I liked the yellow onion better. Generously sprinkle with salt and pepper, before roasting in the oven at 350 degrees until done.

Butter, chives, herbs, cheese, another kind of meat, vegetables, lemons, limes, oranges, etc. OH EM GEE. Do it this weekend.
